Chef Jesse MacDonald knows how to spot fresh seafood. Before starting his culinary career, he fished lobster in the spring while going to school. He was young, at just 25, to take on the newly renovated 1809 Restaurant & Bar… a staple in the Miramichi community he calls home. Jesse was well prepared for the challenge – hard work has prepared him well. A graduate of the Culinary Institute of Canada in PEI, his early training was at the Inn at Fortune Bay. During our interview with him, he made an interesting observation. “On the east coast, we are so close to the bounty of the sea and the land. We are very similar to Europe with the access to fresh food,” says Jesse. “My goal is to bring the product to the forefront.” His blackened salmon recipe (below) and TripAdvisor reviews are a testament to his early success.
